Thank you so much for the tips! I now understand why my loaf was so small, I only used about half the yeast needed. And Ed, yes, my machine has the whole wheat cycle, and I did use it. I kinda figured the same as you. I also saw the wheat gluten and honey in another recipe, so I think I will give those suggestions a try after I go grocery shopping again. I really want to make this work, as wheat bread is about the only common food that my husband and I can share. He has Crohns disease and can only tolerate highly processed foods. Not only is this a cooks nightmare, but I am constantly having to look at 'illegal' foods in my cupboard. I actually started cheating by eating a twinkie here and there-----YUK. I never ate or liked twinkies before, but they were available when I was weak. Anyhow... I will let you know how my next effort on the bread goes. Take care. Teri ...

In 'Sugar Bust for Life With the Brennans' (Sugar Busters cookbooks written by owners of Brennan's restaurants in New Orleans), there are some recipes for whole wheat breads of various kinds, made without sugar, although they do have a bit of granulated Sweet 'n Low (which has a small amount of dextrose in it ... which is sugar) ... I categorize these as 'salt rising breads' ... they rise because of salt, not sugar ... in these books there is a buttermilk whole wheat bread and I'd think that'd be similar to sourdough, although I haven't made it. It seems like it'd be possible to make sourdough with whole wheat flour ... anyhow, SB does not say that you can't have bread made with small amounts of sugar ... just that it should be whole grain ... there may be an acceptible sugar limit per serving, dunno ... anyhow, I'd recommend you look at the Brennan's recipes to see if you could do something with sourdough ...
