Strained yogurt, Greek yogurt, yogurt cheese, or labaneh (Arabic: لبنة‎ labnah), is yogurt that has been strained to remove most of its whey, resulting in a thicker consistency than unstrained yogurt, while preserving yogurts distinctive, sour taste. Like many types of yogurt, strained yogurt is often made from milk that has been enriched by boiling off some of its water content, or by adding extra butterfat and powdered milk. In Europe and North America, it is often made with low-fat or fat-free yogurt. In Iceland a similar product named skyr is produced. Strained yogurt is sometimes marketed in North America as "Greek yogurt" and in Britain as "Greek-style yoghurt", though strained yogurt is also widely eaten in Levantine, Eastern Mediterranean, Middle Eastern, Central Asian and South Asian cuisines, wherein it is often used in cooking (as it is high enough in fat content to avoid curdling at higher temperatures). Such dishes may be cooked or raw, savoury or sweet. Due to the straining ...
MMMMM----- Recipe via Meal-Master (tm) v8.01 Title: Frozen Yogurt Categories: Yogurt Yield: 4 servings 2 c Yogurt cheese 1/2 c Sugar 1 T Vanilla 4 Egg whites 1 c Fresh strawberries, thinly -sliced One cup of yogurt makes about 1/2 cup of yogurt cheese. But scientists dont know how much calcium is lost straining off the whey, so 1/2 cup yogurt cheese could contain nearly a cup servings worth of calcium. The calcium in this recipe is figured according to this formula. Its easiest to make yogurt cheese from yogurt containing pectin. These recipes have been analysed using non-fat yogurt. Low-fat yogurt may be preferable to some taste buds. To strain, place a colander lined with cheesecloth in a bowl. If the colander has legs, it can stand right in the bowl. If it doesnt, rest it on the bowl edge so there is room for the whey to drain off. Weight the yogurt down with empty glass jars. Straining takes at least six hours. Dont stop until the remaining cheese is about the consistency of cream ...

Yogurt has always enjoyed the reputation of being healthy, cool and wholesome. It is extensively used in all parts of the world and relished for its taste and nutritional benefits. But the regular yogurt is bit runny and may not suit a dish that requires thick consistency. Greek yogurt is an interesting variation to the plain yogurt and is favored for its thick and creamy texture.. Native to Greece, it is made by filtering yogurt in a cloth or paper bag or filter, to remove the whey, giving a consistency between that of yogurt and cheese. It is widely used in Greek cooking and is typically made out of sheep or cows milk, however Americans prefer cow milk to prepare Greek yogurt.. Greek yogurt can be eaten plain or can be enriched by adding fresh fruits or honey or maple syrup. It also makes an excellent substitute for sour cream. It is used for yogurt dips, salad dressings, sauces, smoothies, desserts or any dish that can absorb the taste of the yogurt very well. It is readily available in the ...
Probiotic yoghurt, pH 4.5, with acceptable organoleptic profiles was prepared using standard procedures. Flavouring of probiotic yoghurt was done using the spice Aframomum danielli, strawberry and vanilla. Samples flavoured with A.danielli , strawberry and vanilla though more viscous than ordinary yoghurt were generally preferred. Volatile components of A.danielli were extracted using diethyl ether, dried and concentrated followed by analysis using gas chromatography coupled to mass spectrometry. Flavour components like 2-methyl-1-propen-1-yl, 3-methylbut-2-enyl and 1-methyl-4-(1-methylethyl) reported to provide the desirable aroma and taste in yoghurt were identified in A. danielli ...
Greek yogurt can definitely be a healthy choice, but like all other packaged foods, you must read your nutrition labels. A survey of the most well-known brands of Greek yogurts reveals that almost all non-fat plain Greek yogurts are great choices. The simple ingredient lists contain nothing more than non-fat milk and bacterial cultures. It is when you steer outside of this category that things start to get iffy. For instance, some low-fat (2%) or whole Greek yogurts contain cream in addition to non-fat milk, resulting in yogurts that are more similar to ice cream in fat content than yogurts. (Regular whole yogurt has 5.6 grams of fat.) For example, Fages Total Classic Plain Yogurt delivers a whopping 20 grams of fat in a mere 7 oz. serving!. The other category that can spell trouble is the fruit-flavored Greek yogurts. Whether organic or not, they all contain some kind of thickener, plus flavor and coloring, and many contain very little real fruit, if any. For example, the word "strawberries" ...
There are different yogurt products on the market and many are heat-treated for stability.. If you make yogurt with active bacteria, they will continue to live and digest the lactose in the milk you started with. This also means the flavour profile of the yoghurt will change over time - most significantly during the first hours or days, but the process wont really stop. This is something yogurt manufacturers have to deal with as well. An easy solution is to kill the bacteria with heat, but of course that means you wont be able to use that yogurt to make more yogurt - there are no live yogurt bacteria present any more.. Laws vary between countries, but for example in Germany, manufacturers are allowed to heat the yogurt to kill the bacteria (but must write "heat treated"1 on the label). They may or may not choose to do so. On the other hand, keeping the bacteria alive and active allows for marketing the yogurt as especially healthy. Organic manufacturers are generally forbidden to heat their ...
In a 12-week randomized controlled trial ( double-blind study), based on data on serum 25(OH)D changes from other studies (35), to achieve 1 standard deviation difference in circulating 25(OH)D with two-sided alpha of 0.05 and a beta of 0.2 after a 12-week intervention period, the sample size was calculated 40 individuals per treatment group. Considering 3 polymorphic variant groups and one control group which receives plain yogurt drink, 160 subjects are needed. Allowing for 10% attrition over 12 weeks of intervention, a total of 180 subjects are required. In treatment groups, all patients receive 500 ml per day of low-fat (1%) Yogurt Drink fortified with approximately 500IU of vitamin D3 . Control group receives 500 ml per day of plain (unfortified) Yogurt Drink. Metabolic, inflammatory and oxidative stress markers are evaluated at the beginning and in the end of the interventional period ...
Method: Put yogurt to drain in a fine-mesh sieve or a special yogurt strainer for at least 24 hours. When yogurt is very thick and has reduced to about half the original quantity, remove from strainer, discarding the whey. Transfer yogurt to a bowl and add salt, mixing in very well. Have a tray ready or baking sheet spread with clean dish towels. Dip your hands in water, then take a small amount of yogurt and shape it into a ball the size of a walnut. Set ball on tray and continue with remaining yogurt. When all yogurt is shaped, set another dish towel lightly on top of them and put them aside to dry for at least 24 hours. In a small bowl, mix together the zaatar and sumac, with the red pepper if you wish. Take a ball and roll it gently in mixture to coat it lightly. Continue with other yogurt balls. When all balls are coated, set them in a single layer on a tray. Refrigerate until you are ready to serve.. Variation: Instead of rolling yogurt balls in herb mixture, transfer them to a clean ...
Lactalis has agreed to acquire Siggis - the U.S. based maker of Icelandic-style skyr yogurts.. The deal expands the global dairy companys yogurt portfolio.Terms of the acquisition were not disclosed. What this new identity enables us to do is start to seed, if you will, us going into other areas beyond yogurt," says Peter McGuinness, Chobanis chief marketing and commercial officer. But he wouldnt say what new foods or products it might make, or when it would happen.. Chobani has grown quickly since its yogurt was first sold at supermarkets 10 years ago. Older food companies scrambled to catch up and offer their own versions of Greek yogurt, but last year Chobani overtook General Mills Inc.s Yoplait as the best-selling yogurt brand in the U.S., according to market research firm Euromonitor.. McGuinness says the new, thicker font makes Chobani easier to spot in the overcrowded yogurt aisle, and the off-white containers differentiate it from its rivals.. Its Smooth Yogurt, which it launched earlier this year as a less-tart alternative to Greek yogurt, gets a more colorful container and shrinks the Chobani name. A similar treatment was given to Chobani Flip, which has yogurt in one container ...

The effect of calcium on the viscosity, firmness, and smoothness, as determined by extent of nodulation, of stirred probiotic yogurt produced by bacterial fermentation was investigated. Standardized milk for yogurt manufacture was prepared, and calcium was added or removed from the system. Calcium was added as Ca2+ in the form of CaCl2 (up to 13.6 mM) or nonionic calcium as Gadocal-K (calcium potassium citrate; up to 49.8 mM). Calcium was removed by chelating with sodium citrate (up to 16 mM) or by cation exchange with Amberlite IR-120 plus (sodium form) resin (up to 10 g/L). Calcium chloride and sodium citrate were added either before or after heat treatment of milk, and nonionic calcium was added before heat treatment. Calcium removal by ion exchange was performed before heat treatment. Neither Ca2+ addition nor removal by chelation with citrate resulted in stirred yogurt with viscosity, firmness, and smoothness superior to those of the control yogurt, whereas addition of 49.8 mM nonionic ...

I discovered Greek yogurt years ago in Greece. I did a bit of traveling when I was 30 and ended up working in a cucumber factory on the island of Crete. Yep, I did. (And I still like cucumbers!). At lunchtime, some of the other workers would cut up fresh fruit and stir it into plain yogurt. It was delicious then and it is delicious now. I wont eat yogurt - always Greek yogurt - any other way.. Greek yogurt is all the rage these days. Someone recently asked me if it was healthier than regular yogurt. Before I said, "of course!" I decided to check in with an expert - Registered Dietitian Nutritionist Patsy Catsos of Nutrition Works, LLC in Portland, ME.. ...
Now lets have a quick look on how yogurt is made in Moo Cow (yup, they make their yogurt fresh for productions of their other products such as froyo and yogurt drinks). Cleanliness is vital in all dairy or temperature controlled factories as there are healthy bacteria growing in yogurt. You do not want any cross-contamination to happen. In Moo Cow, the equipments, utensils and pots are all sanitized before using.. Milk is then warmed till 80C. Then, it is folded until the temperature drops till 40 C. A culture that contains probiotic bacteria is mixed in to the warm milk. Once it is mixed in, the tub will then be in incubation for a minimum of 12 hours on a constant temperature of 39 - 44 C. This will promote healthy bacteria growth and for the milk to ferment. After 12 hours, it will then be stored in a chiller between 0 - 4 C for another 24 hours to thicken the texture of yogurt. Once the yogurt is chilled for 24 hours, it can be eaten or used for other purposes (like making cakes, drinks, ...

Youve all heard about the health benefits of the probiotic bacteria found in yogurt and other similar fermented dairy products such as kefir. This recently published study provides more evidence of yogurt cultures actions against serious disease-causing pathogens, such as Fusobacterium nucleatum.. F. nucleatum can cause diseases in the mouth, teeth, brain, pleura, lungs and liver. It induces fetal death in pregnant women and can lead to colon cancer by binding to the lining of the gastrointestinal tract, according to a recent study in the journal, Functional Foods in Health and Disease.. In this study, when yogurt and kefir were added to a petri dish filled with F. nucleatum and incubated for 3 days, there appeared clear zones where the yogurt and kefir were placed. Thus showing inhibition of the growth of F. nucleatum. Interestingly, the plain milk used for the yogurt and kefir did not show an inhibitory effect, but the higher the concentration of the kefir and yogurt probiotic bacteria, the ...

Posted By Sarah. Yes, yogurt can be eaten on the HCG diet. However, it cant be eaten on all the phases. After finishing phase 2, the low 500 calorie portion of the HCG diet. Dieters can start to include new foods. The rule to remember in phase 3 is no sugar and starches. Yogurt is a great food for phase 3, but it must be sugar free.. Because the HCG is no longer begin taken, the dieter has a wide host of food options. Yogurt is just one choice of many. Phase 3 is a time of stabilization. The body is finding its natural weight. This phase can be approximately three weeks depending on the length of the plan. However, dieters can indulge in ham, pork chops, and venison. Dr. Simeons, the creator of the HCG diet plan, does caution about fats. He states that if no carbohydrates are being eaten, dieters can eat fats more liberally. However, when fats and carbohydrates are combined that is when things get out of hand.. In addition, there is a mountain of vegetables to choose from. Brussels sprouts, ...
The fresh yogurt will set in about 5-6 hours. If the place is cold the process may take longer (10-12 hours). You can easily check if the yogurt has set by tipping the container a bit - its contents will be firm instead of liquid. For a denser yogurt with more acidic and tart taste you can leave it culturing longer (e.g. overnight).. Your yogurt is now ready to be enjoyed!. Smell it - doesnt it smell incredible! It tastes incredible as well!. A quick advice - for best results, move it to the fridge for a couple of hours before you eat it - it will get a bit denser and somehow yummier!. Important: Keep the remaining yogurt starter in a Ziploc bag in the freezer. The starter is highly hydrophilic - if moisture gets inside the pack it will ruin it quickly.. ...
In a recent study 25 different types of yogurts were tested by the BioLumix method and the plate count method. The BioLumix ready to use vials were directly inoculated with 1.0 ml of various yogurts and monitored in the BioLumix system for 12 hours. Figure 1 shows the curves obtained. Key: Dark blue - Grape yogurt, Green - Grape yogurt inoculated with Citrobacter, Lt Blue - Raspberry yogurt, and Red - Raspberry yogurt inoculated with E. coli.. All products tested using the automated BioLumix assay for coliforms yielded results in a considerably shorter test time (typically 10-12 h) than the conventional Violet Red Bile Agar (VRBA) method (24 h to 72 h with confirmation). The BioLumix method can detect ,1 cfu/gram of product, being 10 times more sensitive that the plate count method. The BioLumix coliform medium had better selectivity in detecting coliforms, eliminating the need for the confirmation step.. ...
Researchers with Victoria University, Melbourne, Australia, learned that supplementing yogurt with soy protein isolate improved the performance of yogurt starter culture and yielded some promising health benefits.. In the supplemented yogurt, lactose metabolism by the yogurt starter culture, including Lactobacillus delbrueckii ssp. bulgaricus ATCC 11842 and Streptococcus thermophilus ST 1342, significantly ATCC 11842 and ST 1342, significantly increased. The researchers also reported that although the supplementation of soy protein isolate altered the ratio of lactic acid to acetic acid by decreasing the lactic acid content and increasing the concentration of acetic acid in the yogurt, it promoted the metabolism of lactose by the yogurt starter during storage. While the viability of both L. delbrueckii ssp.bulgaricus and S. thermophilus decreased, and decreased, their concentrations remained high.. Another important point is that in the supplemented yogurt, the yogurt starter culture was able to ...

Probiotic Yogurt (alternately Kefir) must be introduced to augment your diet; as a means of countering the build-up of "pathogenic" bacteria in the gut, with that of probiotic-type "good" bacteria. For the study, the researchers recruited 4,445 participants between 2008-2010 aged 18 and over. The routine yogurt consumption of the participants was recorded at the start of the study along with a validated diet history.. The health-related quality of life for the participants was then measured using surveys up until 2012, giving an average follow-up period of 3.5 years.. "In comparison with people that did not eat yogurt, those who ate this dairy product regularly did not display any significant improvement in their score on the physical component of quality of life, and although there was a slight improvement mentally, this was not statistically significant," states López-García.. Specifically, participants that consumed six or fewer servings of yogurt a week reported similar physical health survey scores compared with participants that consumed at least one serving every day. These results were similar among participants that had no diagnosed illnesses, never smoked or followed the ...
Yoghurt bacteria. Coloured scanning electron micrograph (SEM) of the bacteria Streptococcus thermophilus (spherical) and Lactobacillus bulgar- icus (rod-shaped) in live yoghurt. S. thermophilus are Gram-positive bacteria that often form chains as seen here. These thermophile bacteria are capable of living at the high temperatures of 50- 65 degrees Celsius. L. bulgaricus are Gram- positive bacteria that grow in acid media and produce lactic acid from the fermentation of carbohydrates. Both of these bacteria are used in the manufacture of yoghurt. They are added to milk and incubated at a high temperature to produce yoghurt. Magnification: x4,375 at 6x7cm size. - Stock Image B236/0121
To make yogurt, milk is first heated to 180 degrees Fahrenheit for 30 minutes to denature the whey proteins; this allows the proteins to form a more stable gel. The yogurt is pasteurized before adding the cultures. The pasteurization process kills any pathogens that can spoil milk as well as to eliminate potential competitors of the active cultures. After milk pasteurization, the milk is cooled down to 108 degrees Fahrenheit, the temperature for optimal growth of yogurt starter cultures. Last, the yogurt starter cultures (probiotics) is added into the cooled milk and incubated until a pH of below 5 is obtained. This is called the fermentation process, whereby lactose in the milk is converted to lactic acid, which lowers the pH. When the pH drops below pH 5, micelles of caseins, which are amphiphilic proteins, loses its tertiary structure due to the protonation of its amino acid residues. The denatured casein proteins reassemble by interacting with other casein proteins, and these intermolecular ...

Put a lot of skim milk in a glass bown and put in microwave on high for 6 minutes. (A lot is about 1 1/2 or 2 quarts -- it doesnt seem to matter to the microwave.) I think it is better in a taller vessel, but this might not matter either. Try it both ways... Then cool to tepid. Meanwhile, get out some plain non-fat yogurt (or low fat -- again it doesnt matter, except I try to get the kind of yogurt for this first starter that doesnt have gelatin in it -- read carefully). Mix a little of the cooled milk into the yogurt to smooth it down (about 1/2 cup of starter yogurt). THen gradually stir into the cooled milk. Leave overnight in the microwave or in the oven with the light or pilot light on. Stir if it appear that nothing is happening. If your spoon is coated, something is happening -- it just might take a while to set. When it looks very lightly set, put in the refrig. It will be the old fashioned kind of yogurt that Pavels makes in the San Francisco Bay Area, but that doesnt travel well ...

As I expected, the plain flavors were too tart for my sweet tooth. However, if I mixed in some sweetener they were more palatable. The blueberry and honey vanilla bean were pretty good, but again, there was that tart flavor mixed in that Im personally not a huge fan of, but I bet some of you would enjoy.
