Marine fish species exhibit low capacity to biosynthesise highly unsaturated fatty acid (HUFA) in comparison to strict freshwater and anadromous species. It is admitted that the Delta(6) desaturase (FADS2) is a key enzyme in the HUFA biosynthetic pathway. We investigated by quantitative PCR the relative amounts of FADS2 mRNA in European sea bass (Dicentrarchus labrax) in comparison with a salmonid species, the rainbow trout (Oncorhynchus mykiss L.). The analysis of the expression data was performed regarding the difference of the characteristics of a critical fragment of the fads2 gene promoter between sea bass and Atlantic salmon. The lower level of fads2 gene expression observed in sea bass suggested that fads2 gene putative promoter, which exhibited an E-box like Sterol Regulatory Element (SRE) site but lacked a Sp1 site, is less active in this marine species. The gene expression or the ability to respond to environmental factors experienced later in life may be altered by this process. We have focused our studies on two types of environmental factors that confer changes in DNA methylation: temperature and farming conditions. First, we studied temperature effects on DNA methylation of the aromatase promoter, the enzyme that converts androgens into estrogens and is essential for ovarian development, in 1-year old sea bass. The effect of gutting and filleting on the formation of biogenic amines and its relation to microbiological and sensory attributes in ice-stored sea bass (Dicentrarchus labrax) was studied. Pseudomonads, H2S-producing bacteria, Brochothrix thermosphacta and to a lesser extent Enterobacteriaceae were the dominant micro-organisms in whole, gutted and filleted sea bass. Higher populations (P,0.05) of these micro-organisms were present in filleted sea bass as compared to gutted and whole fish samples. Seven biogenic amines namely: putrescine, cadaverine, spermidine, tyramine, tryptamine, spermine and histamine were determined in fish samples. Putrescine was the main biogenic amine formed. Its highest value (23.86 mg/kg) was recorded in filleted sea bass on day 16 of storage. Respective putrescine values for gutted and whole sea bass were 12.64 and 3.12 mg/kg (day 16). Due to the paucity of oceanic resources utilized in the preparation of diets for cultured fish, commercial feed producers have been trying to replace fishmeal (FM) using alternative protein sources such as vegetable protein meals (VMs). One of the main drawbacks of using VMs in fish feed is related to the presence of a variety of anti-nutritional factors, which could trigger an inflammation process in the distal intestine. This reduces the capacity of the enterocytes to absorb nutrients leading to reduced fish growth performances. When fungi experience stress, Martens team found an increase in the number of septa created. Like bulkheads in a ship, septa prevent catastrophic loss of cellular cytoplasm if theres a break in the cell wall. All the breedings were injected with Nerestin 1, the females received two doses of 20%, respectively 80% of the total dose, within 24 hours, and the males received only the two doses representing 1/3 and 2/3 of the dose total administered to females. For histological examination, oocyte samples were collected from adult H. molitrix females. The sampling periods overlapped with the maturation period after the vitellogenesis (April-May 2016) and ovulation, which took place in June 2016.
