Sweetpotato is an important staple food crop in Sub-Saharan Africa, with production being concentrated in East Africa, particularly around Lake Victoria. Productivity of the crop is greatly constrained by viral diseases. Four main viruses have consistently been detected from various surveys done in the region viz., sweetpotato feathery mottle virus (SPFMV), sweetpotato chlorotic stunt virus (SPCSV), sweetpotato mild mottle virus (Sp.m.MV), and sweetpotato chlorotic fleck virus (SPCFV). The most severe symptoms have been caused by co-infection with SPCSV and SPFMV, resulting in the synergistic sweetpotato virus disease (SPVD). Iron and zinc are micronutrients essential to the human diet but are in deficient supply to many in the tropics. Fortifying the micronutrient content of staple crops like sweetpotato [Ipomoea batatas (L.) Lam.] would go far in alleviating this intractable problem. This article presents estimates of broad-sense heritability for iron and zinc content in sweetpotato roots using a technique based on full-sibling families. Among individual genotypes, iron and zinc concentration varied by a fourfold and sixfold difference, respectively, whereas dry matter concentration showed a threefold variation. Family mean estimates varied significantly for the three traits. High broad-sense heritability for iron (H = 0.74), zinc (H = 0.82), and dry matter concentration (H = 0.93) were obtained among full-sibling families. The objective of the study is to determine changes in glucose and lipid profile after consumption of sweet potato and cassava in humans with moderately raised serum glucose and lipid profile. Sweet potato (Ipomoea batatas, Super Taiwan variety), and cassava (Manihot esculenta) were used as test foods while white bread was used as the control food. Fifty-nine apparently healthy human adults were fed with the test foods for 90 days and grouped into three: Control, Sweet potato and Cassava. After an overnight fast, 10 mL blood samples were taken from the study participants for total cholesterol, HDL-C, LDL-C, triglycerides, glucose and hemoglobin A1C measurements. Hi, I tried your shaping method with another recipe and it turned out fantastic :D I used 2 diff colour dough (green and white) and came up with bi-coloured roses XD But after trying this recipe - shaping them into croissants - I think the yeast I added (1-3/4 tsp which i assume is around 5.5g, after halving recipe) is a bit too much cuz my dough doubled in size in 20 mins during first proof and 15 mins during 2nd proof... In this study, the color value, water solubility, swelling power and sensory evaluation of Dioscorea batatas was examined with the addition of functional additives such as sugar alcohols and organic acids to investigate the browning inhibition and preference of these additives. Treatment with erythritol and citric acid were found to result in the highest hunter L-value, solubility and swelling power relative to the other functional additives. Therefore, erythritol and citric acid were selected as additives for Dioscorea batatas. The Dioscorea batatas containing the mixed additives (erythritol and citric acid) showed higher brightness, water solubility and swelling power than those containing only a single additive. In addition, the color and taste preference determined in the sensory evaluation had higher values when the mixed additives were used.

We have been eating sweet potatoes regularly of late and often times when I make up a batch of mashed sweet potatoes I have extra on hand to use in other recipes later in the week. Exogenous ethylene is commonly used as a commercial sprouting inhibitor of potato tubers. The role of ethylene in the control of sprouting of sweetpotato roots, however, is not known. The aim of this study was to investigate the role of ethylene in control of sprouting in sweetpotato roots by observing the effect of an ethylene synthesis inhibitor, aminoethoxyvinylglycine (AVG), and the ethylene antagonist, 1-methylcyclopropene (1-MCP), in the presence and absence of exogenous ethylene on root sprouting and associated sugar accumulation. Continuous exposure to 10 μl L−1 ethylene, 24 h exposure to 625 nl L−1 1-MCP or dipping in 100 μl L−1 AVG all inhibited sprout growth in sweetpotato roots of two varieties over 4 weeks of storage at 25 °C. The observations that both ethylene on its own and 1-MCP, which inhibits ethylene action, inhibit sprout growth indicate that while continuous exposure to exogenous ethylene leads to sprout growth inhibition, ethylene is also required for sprouting. ...

This recipe is still in testing mode. I once had an impeccably delicious sweet potato frittata at brunch when visiting a friends family on Thanksgiving weekend. This is my attempt to recreate it, and when I made it this morning, it was my first frittata. I was working from a Lesley Waters recipe on BBC Food that was missing some steps, and I made some modifications to suit my own ingredients and tastes. Ill make some edits next time I cook it and make some revisions based on the attempt. That said, though, the result was still quite delicious. The sour gaminess of the goat cheese is beautiful with the sweetness of the sweet potatoes and onion, and the notes of spiciness from red chili and basil offset those other flavors in a very harmonious way.
