Im all for the idea of learning from books and online articles. Canning how-tos are great, especially when published or sanctioned by trusted sources. In fact, when in conversation with someone about a food preservation question, my first response to a conundrum is often, "What does the Ball Book say about it?". But the publications dont include all the secret tricks. My theory is that they dont have to. Consider the conditions under which food experts develop and test methods and recipes: modern spacious kitchens with state-of-the-art equipment, and plenty of time to get the job done.. Out on the homestead, we dont always have a test kitchen and staff at our disposal, and we need all the little tricks we can get to save us time and effort when putting up the harvest. Today, consumers demand foods that are minimally processed, as natural as possible, and yet are convenient to use. Complicating these factors is a consumer preference toward cured and smoked foods that are processed with lower salt, lower nitrate and higher moisture levels. These parameters have a tremendous impact on the safety of a given cured/smoked food or process. Preferences for low fat and low sugar have less impact on the safety, but these factors can change the traditional curing and smoking process. It will be difficult to completely eliminate the use of nitrite, as there is no known substitute for it as a curing agent for meat. Nonetheless, the demand for fewer chemicals added to foods has put pressure on the industry and the scientific community to seek new alternatives. If you are interested in preserving, I highly suggest that you do your own research. Every canner SHOULD have Ball Blue Book Guide to Preserving and Ball Complete Book of Home Preserving. After that, every canner should have the National Center for Home Food Preservation as a favorites link. The National Center for Home Food Preservation stays current on the latest canning research and offers advice and tips. If at any time you read a recipe that you are just not sure about, you can go to NCHP and look up that technique to see if the technique is valid. I highly suggest to add Well-Preserved by Eugenia Bone, Canning for a New Generation by Liana Krissoff, and The Complete Book of Small Batch Preserving by Ellie Topp and Margaret Howard to your canning book library. Then I pack the shredded cabbage into quart or half-gallon jars (latter shown here), adding a dose of salt every few inches, along with a few juniper berries per jar. A wooden rolling pin makes an excellent tool for repeatedly mashing down the cabbage into a tightly packed mass, which also helps release some juices. When Ive packed all I can to the base of the rim, I pour some boiling water into the top, and screw on a good-quality canning lid and ring, a good use for once-used canning lids. You dont want these to seal entirely, so you dont water-bath them. The not-quite-seal you get with hand-tightening allows just enough air exchange to allow for controlled fermentation without spoilage. These just sit on the counter or another storage area, and do their thing; weeks or months later, we crack a jar to a loud HISSSS and most of the time a nice, tangy, excellent kraut. In the 1930s, gastric cancer (which then was mainly cancer of the lower stomach) was the most common cause of cancer deaths for American men. However, over the course of the 20th century, classical cancer of the lower stomach became much less common; probably because of the use of refrigeration as the principal means of food preservation rather than salt-based food preservation.
