The cheese originates from the village of Cheddar in Somerset, south west England. Cheddar Gorge on the edge of the village contains a number of caves, which provided the ideal humidity and steady temperature for maturing the cheese.[5] Cheddar cheese traditionally had to be made within 30 mi (48 km) of Wells Cathedral.[1] Cheddar has been produced since at least the 12th century. A pipe roll of King Henry II from 1170 records the purchase of 10,240 lb (4,640 kg) at a farthing per pound (totalling £10.13s.4d).[8] Charles I (1600-1649) also bought cheese from the village.[5] Romans may have brought the recipe to Britain from the Cantal region of France.[9] Central to the modernisation and standardisation of Cheddar cheese was the 19th-century Somerset dairyman Joseph Harding.[10] For his technical innovations, promotion of dairy hygiene, and volunteer dissemination of modern cheese-making techniques, he has been dubbed the father of Cheddar cheese.[11] Harding introduced new equipment to the ...

MicrobialEvaluation of Selected Fresh Produce Obtained at Retail Markets. Richard L. Thunberg; Tony T. Tran; Reginald W. Bennett; RogerN. Matthews; Negash Belay, Journal of Food Protection ,Volume: 65 Number: 4Page: p677 - p682. The microbial quality of five types of fresh produce obtainedat the retail level was determined by standard quantitative techniques. Thesetechniques included aerobic plate count (APC), total coliform counts, Escherichiacoli counts, and yeast and mold counts. Three different methods were used todetermine total coliform counts, which consisted of MacConkey agar plate counts,Colicomplete most probable number counts, and Petrifilm E. coli (EC)plate counts. The mean APCs for sprouts, lettuce, celery, cauliflower, andbroccoli were 8.7, 8.6, 7.5, 7.4, and 6.3 log10 CFU/g, respectively.MacConkey agar counts indicated that 89 to 96% of the APCs consisted ofgram-negative bacteria. Yeast and mold counts were in a range expected of freshproduce. Fresh produce was also analyzed for ...

Listeria monocytogenes is an important foodborne pathogen that can cause serious illness in immunocompromised individuals, pregnant women, the elderly, and newborns. The aim of this study was to: (i) evaluate the prevalence and contamination level [most probable number (MPN)] of L. monocytogenes in 567 retail raw foods (fishery products, n = 154; raw/fresh meat, n = 123; frozen foods, n = 110; edible fungi, n = 108; vegetables, n = 72) collected from South China and (ii) to gain further knowledge on the phenotype and genotype distributions of this important foodborne pathogen. Approximately 22% of the samples were positive for L. monocytogenes. The contamination levels were between 0.3 and 10 MPN/g in 75.0%, between 10 and 100 MPN/g in 11.0% and less than 100 MPN/g in 14.0% of the countable samples. Five serogroups were identified among the 177 foodborne L. monocytogenes isolates, with 1/2a-3a (42.4%) and 1/2b-3b (26.0%) serogroups being the most dominant. Serogroups I.1 and II.2 were only found in the

The Centers for Disease Control and Prevention (CDC) estimates that 1 million foodborne illnesses and 380 deaths in the U.S. each year can be linked to nontyphoidal salmonella.. The SeqSero system identifies serotypes, or distinct strains of salmonella, from ...
To the Editor: Like all scientific undertakings, our estimates require assumptions. Because the actual frequency of foodborne transmission of unknown agents cannot be measured directly, it must be assumed. If unknown agents had transmission characteristics similar to those of rotavirus (1% foodborne transmission) or cryptosporidium (10% foodborne transmission), as Dr. Hedberg suggests, the number of cases of foodborne illness caused by unknown agents would be substantially lower than we estimated. However, unknown agents could just as easily have the transmission characteristics of Escherichia coli O157:H7 or Campylobacter (80% foodborne transmission), which just 30 years ago were unknown agents. For the sake of objectivity, we based our assumption on the aggregate of information for known pathogens rather than on expert opinion. Interestingly, however, the Council of Science and Technologys expert opinion of the percentage of diarrheal illness due to foodborne transmission was 35% (1), ...

In general, populations at increased risk of illness relating to infected food are characterized by compromised immune function.1 Hormonal changes that occur during pregnancy decrease cell-mediated immune function, thus increasing the susceptibility of pregnant women to certain types of infections.2 Food-borne pathogens of special concern for pregnant women include Listeria monocytogenes and Salmonella enterica, as maternal infection might increase the risk of adverse pregnancy outcomes.. Soft-ripened cheeses, deli meats, refrigerated ready-to-eat foods. Unpasteurized milk, soft-ripened cheeses, and refrigerated ready-to-eat meats and seafood have been implicated in past outbreaks of listeriosis,3 an infection caused by the Gram-positive bacterium L monocytogenes. Although increased surveillance of potential sources of contamination has reduced the frequency of outbreaks of listeriosis,4 the incidence among pregnant women remains about 20 times higher compared with the general ...

A study published in Food Microbiology has found that raw milk aged cheeses are relatively safe. The low pH, water content, and high salt levels make the cheese inhospitable to pathogenic bacteria.
Foodborne Illnesses and Antibiotic Resistance Associated with Zoonotic Pathogens Types of antibiotic-resistant foodborne pathogens in USA Emergence and incidence of antibiotic-resistant foodborne pathogen infections Risk factors associated with acquiring antibiotic resistant foodborne microbial infections Trends in prevalence of antibiotic-resistant zoonotic foodborne pathogens in animals, foods and human illness
The individual-level test results showed a higher sensitivity for the 10 g sample than the 25 g sample (table 1). The difference between the 25 and 10 g sample sensitivity was significant after 24 h incubation (p=0.02) but not after 48 h (p=0.63). This is an unexpected finding and further experiments are needed to clarify whether this was a random event in this study or whether it is related to the procedures used. Other authors have reported a detrimental effect of increasing sample weights if a large number of competing micro-organisms are present (Leifson 1936; Harvey & Phillips 1955). Inhibition of Salmonella growth in the 25 g samples is also suggested by the higher rate of positives after 48 h of selective enrichment with these samples. This finding conflicts with the EU reference method for Salmonella testing, ISO 6579:2002, which specifies a 25 g sample and 24 h selective enrichment. In this study, we took subsamples from a faecal mass. Since clusters of Salmonella are not evenly ...
Dr. Daniele Sohier, Business Development Manager for Industrial Microbiology at Bruker Daltonics, added: Working in collaboration with AOAC International and Q Laboratories was a real pleasure and very efficient. We were able to get these two OMA claims in only 6 months, corroborating the reliability and robustness of the MALDI Biotyper for fast and accurate confirmation of many foodborne pathogens and for the identification of other bacteria. The MALDI Biotyper is broadly used in clinical microbiology already. With the AOAC International approvals for two OMAs, we now also have access to regulated food microbiology markets, which represents a further significant market expansion for the MALDI Biotyper. ...
One of the papers in the proceedings was written by Lorenzo Morelli, professor and chair of Food Microbiology and Biotechnology at the Istituto di Microbiologia, Università Cattolica del Sacro Cuore, Piacenza, Italy. Entitled Yogurt, living cultures and gut health, Morelli explains that bacteria used to ferment milk to obtain yogurt belong to a thermophilic, bile-sensitive species of lactic acid bacteria, which are not ideally suited for survival into the human gut. However, assessing the viability of these bacteria through the digestive tract may be relevant to evaluate their potential to deliver some beneficial effects for the well-being of the consumer. The well-known reduction in the symptoms caused by lactose maldigestion is not the only benefit provided by yogurt starter cultures. He reviews additional effects, emphasizing data that suggests strain-dependent effects ...

Escherichia coli is known as one of the most important foodborne pathogens in humans, and contaminated chicken meat is an important source of foodborne infection with this bacterium. The occurrence of extended-spectrum β-lactamase (ESBL)-producing E. coli (ESBL-Ec), in particular, in chicken meat is considered a global health problem. This study aimed to determine the magnitude of E. coli, with special emphasis on ESBL-Ec, along with their phenotypic antimicrobial resistance pattern in frozen chicken meat. The study also focused on the determination of ESBL-encoding genes in E. coli. A total of 113 frozen chicken meat samples were purchased from 40 outlets of nine branded supershops in five megacities in Bangladesh. Isolation and identification of E. coli were done based on cultural and biochemical properties, as well as PCR assay. The resistance pattern was determined by the disc diffusion method. ESBL-encoding genes were determined by multiplex PCR. The results showed that 76.1% of samples were
Dont throw it away just yet. And you dont have to cross your fingers and hope for the best either.. With this ridiculously simple method, you can tell if your peanut butter is still good to eat.. Note: Oil at the top of your peanut butter does NOT mean its gone bad. Separation of the oil is to be expected, especially with natural peanut butter.. Spoiled peanut butter is easy to identify. Because of its high oil content, those oils can go rancid. You can tell if your peanut butter has gone bad because its texture will no longer be creamy (even after stirring the oil back in). It will instead have a grainy and lumpy consistency.. Peanut butter that has gone bad will also tend to be a darker color than fresh peanut butter. You can even give a small amount a taste as bad peanut butter will taste off. Thats a sure sign its time to throw it away.. Keep in mind that peanut butter will not grow mold so you need to test it by looking for the signs outlined above.. ...

Spoilage of processed food products caused by spoilage microorganisms has been reported repeatedly. Among them are heat-resistant molds, which usually contaminate fruits on or near the ground and survive heat treatments used for fruit processing. Heat-resistant fungi can grow and spoil the products during shelf life stored at room temperature and result in great economic losses. In this study, blueberry puree products were developed using cavitation technology. Microbial quality including total plate counts, yeast and molds counts and heat-resistant molds of frozen blueberry materials and processed products following pasteurization at 86, 88, 90, 92, 94 and 96°C (at industrial settings) were determined. Shelf life study of pasteurized blueberry products included periodical checks of microbial quality, soluble solids (Brix %), titratable acidity (citric acid %), pH, viscosity (cP) and flow rate (cm/30 s) for up to 24 weeks at room temperature. Our results indicated that heat-resistant molds, ...

International Journal of Food Microbiology. 118(2):101-15. Interpretive Summary: Listeria monocytogenes is an opportunistic foodborne pathogen that encompasses a diversity of strains with varied virulence. The ability to rapidly determine the pathogenic potential of L. monocytogenes strains is integral to the control and prevention campaign against listeriosis. Early methods for assessing L. monocytogenes virulence include in vivo bioassays and in vitro cell assays. While in vivo bioassays provide a measurement of all virulence determinants of L. monocytogenes, they are not applied routinely due to the requirement for and cost of experimental animals. In vitro cell assays are useful for estimating the virulence of L. monocytogenes strains, but are often slow and sometimes give inconsistent results. Recent identification of novel virulence-specific ...

2018 Institute of Food Technologists® Abstract: Blueberry purée was developed using hydrodynamic cavitation technology. The product was made from entire blueberries without adding any food additives. In this study, microbial reduction following each processing stage (at the industry setting) and after product pasteurization at 86, 88, 90, 92, 94, and 96 °C was investigated. Microbial quality including total plate counts, yeast and molds, and heat-resistant molds counts was determined. Shelf life of pasteurized products stored for up to 24 weeks at room temperature were assessed for microbial quality, soluble solids (°Brix), titratable acidity (citric acid %), pH, viscosity (cP) and flow rate (cm/30 s). Our results indicated that heat-resistant molds, initially present in frozen blueberries with counts at 2.03 log CFU/200g, were totally inactivated at 94 to 96 °C with 1 to 2 min holding time. Shelf life study showed that no product spoilage was caused by bacteria, yeasts and heat-resistant ...
To prevent proliferation of potential pathogens, accelerate the fermentation process, improve organoleptic properties and achieve high levels of food safety and its quality in traditional fermented sausages, the application of meat starter cultures is a necessity. Strain Lactobacillus sakei MRS_296 was selected and molecular-biologically and technologically characterized in the Laboratory of Food Microbiology at the University of Zagreb Faculty of Agriculture. This bacterial strain satisfied very strict selection criteria and it may be used as a part of starter cultures for the standardization of game meat sausages production. In order to maintain high microbial culture counts throughout the whole sausage production, cells can be encapsulated. Microencapsulation can efficiently protect microbial cells from biotic and abiotic stress which can result in the increase of their biomass and viability. In this study, the potential of carrier system based on sodium alginate formed by ionizing gelation ...
Food Safety and the Vulnerable Populations. Everyone eats, so everyone is at risk for foodborne illness. However, certain groups of people have a higher risk of developing foodborne illnesses and they carry a higher risk for serious episodes of disease. These groups include children, seniors, pregnant women, transplant recipients and other individuals with compromised immune systems, such as individuals diagnosed with AIDS, cancer or diabetes. Of the vulnerable groups, children under 5 and seniors over 65 are the ones at greatest risk for serious illness.. The Centers for Disease Control and Prevention (CDC) has reported that there are 31 known foodborne pathogens - the remaining 200+ pathogens are called unspecified agents. Most of the known foodborne pathogens have both acute and long-term health impacts.. While many cases of foodborne illness are mild, foodborne diseases can also be severe. Acute symptoms frequently include headache, muscle aches, vomiting, diarrhea, and sometimes fever. ...

Lactobacillus sakei is an important food-associated lactic acid bacterium commonly used as starter culture for industrial meat fermentation, and with great potential as a biopreservative in meat and fish products. Understanding the metabolic mechanisms underlying the growth performance of a strain to be used for food fermentations is important for obtaining high-quality and safe products. Proteomic analysis was used to study the primary metabolism in ten food isolates after growth on glucose and ribose, the main sugars available for L. sakei in meat and fish. Proteins, the expression of which varied depending on the carbon source were identified, such as a ribokinase and a D-ribose pyranase directly involved in ribose catabolism, and enzymes involved in the phosphoketolase and glycolytic pathways. Expression of enzymes involved in pyruvate and glycerol/glycerolipid metabolism were also affected by the change of carbon source. Interestingly, a commercial starter culture and a protective culture strain
The Centers for Disease Control and Prevention (CDC) estimates that major foodborne pathogens cause 9 million illnesses each year. The number of foodborne illnesses motivated the FDA to create the Food Safety Modernization Act (FSMA), which Congress passed. The Federal Government drafted the FSMA in response to the continuing occurrence of foodborne illnesses caused by these pathogens. To illustrate the scope of the problem, the table below ranks the risks and costs of the 14 leading foodborne pathogens. Although passed by Congress in 2011, full . . .
When people say The Raw Food Diet, what do you think of? Green salads? A vegetable platter with ranch dressing? This is what I thought of the raw food diet before I did an internship with the Hawaii Naturopathic Retreat Center. As it turns out, raw food can be anything you love: warm soup, pizza or pad thai. It can also be lemon meringue pie, coconut ice cream and brownies. The raw food diet is about eating fresh fruits, vegetables, herbs, nuts, seeds and oils in delicious and creative ways. It is based on the principle that at temperatures greater than 117 degrees Fahrenheit, enzymes denature, nutrients are lost and toxic chemicals are produced. By keeping the enzymatic and nutritional content of food intact, we are receiving more nutrition to support good health while avoiding the disease producing compounds of cooked food. But what about all the good things cooked food has to offer, like warmth, texture, and taste? Raw food repertoire includes warm food like soups, curries, and pasta while ...

It is widely accepted that quantitative reference materials (RM), are indispensable tools for verification of the precision and accuracy of analytical measurements. The RM can be used by food microbiology laboratories, as part of their quality assurance programmes, to achieve their quality control. In Brazil, Anvisa RDC No. 12/01 specifies the enumeration of coliforms as one of the parameters for evaluating cheese quality. The aim of this study was to produce a quantitative RM for proficiency testing (PT) for use in the testing of enumeration of coliforms in cheese matrixes. A sample of an ultra-filtered cheese with a coliforms count of

Foodborne infections can be prevented. The incidence of STEC O157 infection has declined to reach the 2010 national health objective target of ≤1 case per 100,000 (11).†† This decline was mirrored by a decrease in HUS. Many factors likely contributed to this success. One is improved detection and investigation of STEC O157 outbreaks, resulting not only in contaminated products being removed before more persons became ill but also in enhanced knowledge about preventing contamination that was used to prevent future outbreaks and illnesses. PulseNet,§§ the national molecular subtyping network for foodborne bacterial pathogens, can detect widely dispersed outbreaks and has greatly improved the detection and investigation of multistate outbreaks. Others include cleaner slaughter methods, microbial testing, and better inspections in ground beef processing plants (12); regulatory agency prohibition of contamination of ground beef with STEC O157 (resulting in 234 beef recalls since STEC O157 was ...
John Healey of Pyengana Dairy Company produces a variety of Cheddar cheeses, each different from other in taste, texture and aroma. Their Mild Cheddar, matured for 4-6 weeks is soft, subtle in texture with a rich and creamy flavour. The Traditional Cheddar, aged for 3-4 months develops a slight acidity but is still moist and creamy but with a stronger, pronounced flavour. From 8 month onwards until one year, the cheese matures to a drier consistency. However, at this stage the cheese is coming into its own and developing rich flavours. Further aged beyond a year, Cheddar has now fully developed to become crumbly and tasty. The Pyengana Cheddar is available in three more ages: 12-15 months, 16-24 months, and 2+ years. At the age of 3-4 months and at 12+ months, Cheddar produce is infused with seasonal flavourings such as herbs, chilli, garlic, sundried tomatoes, etc.
Microbiology is the study of life forms too small to be observed without the aid of magnification; major groups of microbes include the bacteria, fungi (yeasts and molds), protozoa, and algae, as well as the viruses. In addition, related disciplines such as immunology and molecular biology are included because of their historical origins within microbiology.. As such, the science of microbiology is divided into numerous subspecialty areas that reflect not only the individual groups of microbes (e.g., bacteriology, virology, mycology, etc.), but also their significance in applied areas (e.g., medical microbiology/infectious diseases, microbial ecology, food microbiology, industrial microbiology, biotechnology, etc.) or in areas of basic science (e.g., molecular genetics). Throughout its history, microbiology has played a key role in the development of our understanding of basic biochemical and genetic processes, control of infectious diseases, production of increased and improved food supplies, ...

One of the easiest sweet treats to make is a rice krispy treat. The basic recipe has only three ingredients - marshmallows, rice krispies (or other puffed rice cereal) and butter - and takes only a couple of minutes to mix together. As a marshmallow fan, I like them plain, but as a fan of easy to make treats, I appreciate how versatile these bars are. You can make them chocolate-flavored or dip them in chocolate, you can use other types of cereal in place of the plain rice cereal, and you can even use the bars as a base for a no-bake candy bar, as I did with this batch.. These rice krispies are topped with a layer of peanut butter and a layer of chocolate, giving them a rich peanut butter cup flavor that is a great contrast for the sweet, crunchy base. The peanut butter (I used a natural pb, but a national brand will work well here, too) layer is very slightly crumbly, much more similar to the interior of a peanut butter cup than to a layer of unadulterated peanut butter. The topping is a ...
