This study has two main objectives: on one hand, the evaluation of food items related to the food training courses in order to know which ones require better explanations from trainers and a further development and refinement by food handlers. On the other hand, identifying potential social and personal factors of food handlers that influence on the results of the evaluation. To this end, two tests were performed (one before the training and at the end) and evaluated the results per modules. More people seem to be afraid of flying than driving, despite data that shows the riskiest part of any flight is the drive to the airport. Results from three research studies (USDA funded grants) indicated a need for food safety education for Hispanic and Native American families with young children. The trade-off between costly intervention and economic damage is studied when economic parameters, such as fixed and variable costs of control, and biological parameters, such as the stochastic rate of contamination and the growth rate of contaminants, are altered. The model can accommodate alternative environmental settings. Regulations through random inspections and through terminal inspections are analyzed. As an illustration, optimal actions to control insect infestations in stored wheat are simulated and found to be in accord with commercial practice. Copyright 1999, Oxford University Press.
