The trade-off between costly intervention and economic damage is studied when economic parameters, such as fixed and variable costs of control, and biological parameters, such as the stochastic rate of contamination and the growth rate of contaminants, are altered. The model can accommodate alternative environmental settings. Regulations through random inspections and through terminal inspections are analyzed. As an illustration, optimal actions to control insect infestations in stored wheat are simulated and found to be in accord with commercial practice.

This study has two main objectives: on one hand, the evaluation of food items related to the food training courses in order to know which ones require better explanations from trainers and a further development and refinement by food handlers. It is also a goal of this work to appreciate the level of general knowledge of food handlers before receive any training session and then see if there was some improvement after the course. On the other hand, identifying potential social and personal factors of food handlers that influence on the results of the evaluation. To this end, two tests were performed (one before the training and at the end) and evaluated the results per modules. In general, knowledge levels both initially and after taking the course proved to be satisfactory. Personal and social factors determined better or worse scores on the basis of these.

Results from three research studies (USDA funded grants) indicated a need for food safety education for Hispanic and Native American families with young children. Focus groups and surveys results indicated that these two diverse audiences had less food safety knowledge and that some food handling practices could impact the safety of their family; in particular their children. Certain populations are at greater risk of contracting food‐related illnesses and these groups include children and prenatal women. Several factors that contribute to foodborne illness susceptibility in children include underdeveloped immune systems, lower body weight, the sensitive nature of fetal development, and the fact that children have little control over what they are eating and how it is prepared. Therefore, the main food preparer in families with young children are responsible for safe food handling and preparation to prevent foodborne illness. A multistage sampling method was used to collect sixty-seven raw milk samples that were analyzed for milk quality at four stages of the raw milk chain: dairy farmers, milk hawkers, milk collection centres (MCC) and milk kiosks. Total bacterial counts (TBC) at different stages of the chain were determined and microorganisms were isolated. A questionnaire was distributed to gather information on factors and milk handling practices that influence milk quality at farm level. The study revealed a TBC mean values of 1.2 × 106 CFU/ml (dairy farmers), 2.6 × 107 CFU/ml (milk hawkers), 1.5 × 106 CFU/ml (MCC) and 6.9 × 106 CFU/ml (kiosks/restaurants).
