Iodine food composition data of Norwegian foods have been sparse and knowledge about different dietary iodine sources limited. We compiled a comprehensive iodine food composition database and estimated dietary iodine intake among adults in the latest Norwegian national dietary survey (Norkost 3). The iodine content of food and beverages were compiled using international guidelines and standards. Iodine content of 3259 food items were compiled, including analytical values, values from other food composition databases, estimated values, and values that were based on recipes. Estimated iodine intake in the Norkost 3 population ranged from 15 to 1462 µg/day. Men had significantly higher intake of iodine than women (p < 0.001). The proportion of men and women with estimated iodine intake below average requirement was 19% and 33%, respectively. In young women, 46% had estimated iodine intakes below average requirement and a high probability of inadequate iodine intake. Several dietary sources
In the last decade, there has been an increased interest in anthocyanin-based research with a growing need to accurately measure anthocyanin intake in population studies. Anthocyanin content in foods is known to vary across regions due to climate, soil content and harvesting practices. To accurately measure nutrient intake in population studies, food composition databases tailored to specific regions need to be developed. The aim of this study was to describe the first stage development of an Australian anthocyanin food composition database focusing on fruit and vegetables. A systematic literature search found analytical data on the anthocyanin content of five fruits and two vegetables (purple dragon carrot and red cabbage) out of the total plant-based food category (58 individual fruits and 62 vegetables). Determination of the endogenous loss of fat (ELF) is used to adjust for the estimation of true total tract digestibility (TTTD) of fat in diets and ingredients. Any factor which affected ELF may further affect the digestibility of fat, including sources and concentrations of fat and fiber in the diet. Therefore, the objective of this study was to determine the effects of dietary fiber content and different fiber-rich ingredients on endogenous losses of fat and fatty acids at the end of ileum and throughout the entire intestinal tract in growing pigs. It has then been applied to a retail survey of infant food for trace elements, classifying the food as compliant or non-compliant with the regulatory thresholds or specification limits that are appropriate for each element. The reduction of free or added sugar intake (sugars added to food and drinks as a sweetener) is almost universally recommended to reduce the risk of obesity-related diseases and dental caries. The World Health Organisation recommends intakes of free sugars of less than 10% of energy intake. However, estimating and monitoring intakes at the population level is challenging because free sugars cannot be analytically distinguished from naturally occurring sugars and most national food composition databases do not include data on free or added sugars. We developed free and added sugar estimates for the New Zealand (NZ) food composition database (FOODfiles 2010) by adapting a method developed for Australia. We reanalyzed the 24 h recall dietary data collected for 4721 adults aged 15 years and over participating in the nationally representative 2008/09 New Zealand Adult Nutrition Survey to estimate free and added sugar intakes. Weve known that being overweight and obese are important risk factors for type 2 diabetes, but, until recently, not much attention has been paid to the role of specific foods. I discuss this issue in my video, Why Is Meat a Risk Factor for Diabetes?. A 2013 meta-analysis of all the cohorts looking at the connection between meat and diabetes found a significantly higher risk associated with total meat consumption--especially consumption of processed meat, particularly poultry. But why? Theres a whole list of potential culprits in meat: saturated fat, animal fat, trans fats naturally found in meat, cholesterol, or animal protein. It could be the heme iron found in meat, which can lead to free radicals and iron-induced oxidative stress that may lead to chronic inflammation and type 2 diabetes, or advanced glycation end (AGE) products, which promote oxidative stress and inflammation. Analyses of the nutritional composition of water spinach (Ipomoea aquatica) Forsk leaves were carried out using standard methods of food analysis. The proximate composition as well as mineral elements were determined. The leaves were found on dry weight basis to have high moisture (72.83±0.29%), ash (10.83±0.80%), crude lipid (11.00±0.50%), crude fibre (17.67±0.35%) and available carbohydrate (54.20±0.68%), but low in crude protein content (6.30±0.27%). The leaves also have energy value (300.94±5.31 kcal/100 g) that is within the range reported in some Nigerian leafy vegetables. The mineral element contents were high with remarkable concentration of K (5,458.33±954.70 mg/100 g) and Fe (210.30±2.47 mg/100 g). Also the leaves content moderate concentrations of Na (135.00±2.50 mg/100 g), calcium (416.70±5.77 mg/100 g), Magnesium (301.64±12.69 mg/100 g) and P (109.29±0.55 mg/100 g), with low Cu (0.36±0.01 mg/100 g), Mn (2.14±0.22 mg/100 g) and Zn (2.47±0.27 mg/100 g) contents. ...
