The production of the button mushroom Agaricus bisporus with mycelium-colonized alginate pellets as an inoculant of the growing medium was investigated. Pellets having an irregular surface and porous internal structure were prepared by complexing a mixture of 1% sodium alginate, 2 to 6% vermiculite, 2% hygramer, and various concentrations of Nutrisoy (soy protein) with calcium chloride. The porous structure allowed the pellets to be formed septically and then inoculated and colonized with the fungus following sterilization. By using an enzyme-linked immunosorbent assay (ELISA) to estimate fungal biomass, the matrix components of the pellet were found to be of no nutritive value to A. bisporus. Agaricus bisporus was cultivated axenically on wheat straw compost. Analysis of this culture medium during growth and fruiting showed that the lignin fraction of straw was degraded preferentially during the vegetative growth phase, whereas cellulose was degraded after the emergence of the fruit bodies. A novel technique was developed, whereby natural or synthetic radiolabelled lignin was mixed intimately with axenic compost and the rate of mineralization to CO2 throughout the life-cycle of A. bisporus was monitored continuously without culture disturbance. Mineralization rates were maximal during the vegetative growth phase and the onset of fruiting brought a decrease of this activity. A mutant strain of A. bisporus, which was unable to develop fruiting bodies, was shown to mineralize radiolabelled lignin continuously.

But for cultivated mushrooms, which is what most of us work with, everyday mushrooms, I always go with really high heat-a smoking hot pan, plenty of neutral oil. Most cultivated mushrooms-the ubiquitous white button, oyster mushrooms (above), shiitakes-dont have a big flavor on their own. Its up to the cook to elevate that flavor. Was NOT a good idea, although it tasted fine, it truly looked disgusting. Im glad I did not puree the basil and saved it to use as a fresh garnish. As others mentioned it was bland I tasted as I went, adding S&P as necessary. Julienning the basil and serving it on top with the pine nuts and salad greens on the side lightened the whole dish up. The only complaint from my crowd was that they didnt like how it looked and the texture of the puree was not pleasing.. In the future I will roast the eggplant, tomatoes and mushrooms, and will gently toss with the ricotta, cooked ground ...

I waited to show this guild challenge project. Earlier this year the members of my quilt guild participated in a challenge called All in the Bag. Everyone that wanted to play along brought a gallon bag of fabrics and embellishments to our March guild meeting. The bags were then randomly passed out making sure no one received the bag they brought. Instructions were to use the fabrics and items in the plastic bag to make either a wall hanging, a table runner or a tote bag. One could add fabrics and embellishments from their own stash to supplement if they wished. Fabric scraps and remaining unused embellishments were returned to bag to give back to the owner. The big reveal was during our October meeting. I received a bag with a yard of chocolate brown fabric, a yard of turquoise fabric, a yard of white with a brown and turquoise print, some brown buttons, some white buttons, a roll of turquoise lace ribbon and a roll of black ribbon with gold spots.
