Oils derived from plants or plant products.
Unctuous combustible substances that are liquid or easily liquefiable on warming, and are soluble in ether but insoluble in water. Such substances, depending on their origin, are classified as animal, mineral, or vegetable oils. Depending on their behavior on heating, they are volatile or fixed. (Dorland, 28th ed)
Oils which evaporate readily. The volatile oils occur in aromatic plants, to which they give odor and other characteristics. Most volatile oils consist of a mixture of two or more TERPENES or of a mixture of an eleoptene (the more volatile constituent of a volatile oil) with a stearopten (the more solid constituent). The synonym essential oils refers to the essence of a plant, as its perfume or scent, and not to its indispensability.

A historical and cultural entity dispersed across a wide geographical area under the political domination and influence of ancient Rome, bringing to the conquered people the Roman civilization and culture from 753 B.C. to the beginning of the imperial rule under Augustus in 27 B.C. The early city built on seven hills grew to conquer Sicily, Sardinia, Carthage, Gaul, Spain, Britain, Greece, Asia Minor, etc., and extended ultimately from Mesopotamia to the Atlantic. Roman medicine was almost entirely in Greek hands, but Rome, with its superior water system, remains a model of sanitation and hygiene. (From A. Castiglioni, A History of Medicine, 2d ed pp196-99; from F. H. Garrison, An Introduction to the History of Medicine, 4th ed, pp107-120)

Factor analysis of digestive cancer mortality and food consumption in 65 Chinese counties. (1/46)

Dietary factors were analyzed for the regional difference of GI tract cancer mortality rates in China. Sixty-five rural counties were selected among a total of 2,392 counties to represent a range of rates for seven most prevalent cancers. The dietary data in the selected 65 counties were obtained by three-day dietary record of households in 1983. The four digestive cancer mortality rates (annual cases per 100,000 standardized truncated rates for ages 35-64) and per capita food consumption were analyzed by the principal components factor analysis. Esophageal cancer associated with poor area, dietary pattern rich in starchy tubers, and salt, lack of consumption of meat, eggs, vegetables and rice. Stomach cancer seemed to be less associated with diet in this study because of its small model Kaiser-Meyer-Olkin (KMO) measure of sampling adequacy, suggesting some other carcinogenic factors would play more important role in the development of this cancer in China. The colon and rectal cancer showed close relation to diet; rich in sea vegetables, eggs, soy sauce, meat and fish, while lack in consumption of milk and dairy products. Rapeseed oil was more important risk factor for colon cancer than that of rectum. Rice, processed starch and sugar were closely associated with colon cancer, supporting the insulin/colon cancer hypothesis.  (+info)

Lactic acid bacteria isolated from soy sauce mash in Thailand. (3/46)

Fourteen sphere-shaped and 30 rod-shaped lactic acid bacteria were isolated from soy sauce mash of two factories in Thailand. These strains were separated into two groups, Group A and Group B, by cell shape and DNA-DNA similarity. Group A contained 14 tetrad-forming strains, and these strains were identified as Tetragenococcus halophilus by DNA similarity. Group B contained 30 rod-shaped bacteria, and they were further divided into four Subgroups, B1, B2, B3, and B4, and three ungrouped strains by phenotypic characteristics and DNA similarity. Subgroup B1 contained 16 strains, and these strains were identified as Lactobacillus acidipiscis by DNA similarity. Subgroup B2 included two strains, and the strains were identified as Lactobacillus farciminis by DNA similarity. Subgroup B3 contained five strains. The strains had meso-diaminopimelic acid in the cell wall, and were identified as Lactobacillus pentosus by DNA similarity. The strains tested produced DL-lactic acid from D-glucose. Subgroup B4 contained four strains. The strains had meso-diaminopimelic acid in the cell wall, and they were identified as Lactobacillus plantarum by DNA similarity. Two ungrouped strains were homofermentative, and one was heterofermentative. They showed a low degree of DNA similarity with the type strains tested, and were left unnamed. The distribution of lactic acid bacteria in soy sauce mash in Thailand is discussed.  (+info)

Constituents of peppers: IV. The hydrocarbons of pepper essential oil. (4/46)

Leuconostoc durionis sp. nov., a heterofermenter with no detectable gas production from glucose. (6/46)

Three lactic acid bacterial (LAB) strains obtained from a Malaysian acid-fermented condiment, tempoyak (made from pulp of the durian fruit), showed analogous but distinct patterns after screening by SDS-PAGE of whole-cell proteins and comparison with profiles of all recognized LAB species. 16S rRNA gene sequencing of one representative strain showed that the taxon belongs phylogenetically to the genus Leuconostoc, with its nearest neighbour being Leuconostoc fructosum (98 % sequence similarity). Biochemical characteristics and DNA-DNA hybridization experiments demonstrated that the strains differ from Leuconostoc fructosum and represent a single, novel Leuconostoc species for which the name Leuconostoc durionis sp. nov. is proposed. The type strain is LMG 22556(T) (= LAB 1679(T) = D-24(T) = CCUG 49949(T)).  (+info)

Composition, stability, and bioavailability of garlic products used in a clinical trial. (7/46)

In support of a new clinical trial designed to compare the effects of crushed fresh garlic and two types of garlic supplement tablets (enteric-coated dried fresh garlic and dried aged garlic extract) on serum lipids, the three garlic products have been characterized for (a) composition (14 sulfur and 2 non-sulfur compounds), (b) stability of suspected active compounds, and (c) availability of allyl thiosulfinates (mainly allicin) under both simulated gastrointestinal (tablet dissolution) conditions and in vivo. The allyl thiosulfinates of blended fresh garlic were stable for at least 2 years when stored at -80 degrees C. The dissolution release of thiosulfinates from the enteric-coated garlic tablets was found to be >95%. The bioavailability of allyl thiosulfinates from these tablets, measured as breath allyl methyl sulfide, was found to be complete and equivalent to that of crushed fresh garlic. S-Allylcysteine was stable for 12 months at ambient temperature. The stability of the suspected active compounds under the conditions of the study and the bioavailability of allyl thiosulfinates from the dried garlic supplement have validated the use of these preparations for comparison in a clinical trial.  (+info)

Chronic upper abdominal pain: site and radiation in various structural and functional disorders and the effect of various foods. (8/46)

Pain site and radiation and the effect of various foods were studied prospectively in a consecutive series of patients with chronic upper abdominal pain. Patients followed for less than one year were excluded unless peptic ulcer or abdominal malignancy had been diagnosed or laparotomy had been carried out. A total of 632 patients were eligible for the first study and 431 for the second. Gastric ulcer pain was more likely to be left hypochondrial (17%) compared with pain from duodenal ulcer (4%) or from all other conditions (5%). It was less likely to be epigastric (54%) compared with duodenal ulcer pain (75%). Oesophageal pain was more likely to be both retrosternal and epigastric (25%) compared with non-oesophageal pain (2%). Radiation to the back was more common in peptic ulcer (31%) and biliary pain (35%) compared with functional pain (20%). Pain precipitation by fatty foods was commoner in biliary disease (40%) than in duodenal ulcer (11%), peptic ulcer (9%), or non-ulcer dyspepsia (19%). Orange, alcohol, and coffee precipitated pain more frequently in duodenal ulcer (41%, 50%, and 43% respectively) than in biliary disease (17%, 0%, and 14% respectively). Chilli precipitated pain in one quarter to one half of subjects regardless of diagnosis. Approximately one tenth of all subjects avoided chilli, curry, coffee, and tea because of medical or other advice.  (+info)

In America, the way in which you receive your condiments will depend a bit on the sort of restaurant youre in. If its an extremely expensive restaurant, you obviously shouldnt be asking for condiments at all. If its a fairly expensive restaurant, youll get a rather nice silver dish cointaining your condiment of choice, with a dainty spoon in it. If its a reasonably-priced restaurant, itll be the bottle the sauce came in. If its a really cheap place or an on-street vendor, itll be one of those industrial-sized vats of condiment with a shampoo-style dispenser on the top, and youre left holding your dinner under it and squirting at it. Consider yourselves lucky, Americans.. In Britain, in a really expensive restaurant, youll get the nice silver dish with a spoon. Treasure this because, pretty much anywhere else, you will get a miniature individual sachet of sauce. These sachets are around 8cm long and 2cm wide, and are made of a strange metal/plastic composite originally invented for ...

Budu is a famous Malaysian fish sauce, usually used as seasoning and condiment in cooking. Budu is produced by mixing fish and salt at certain ratio followed by fermentation for six months in closed tanks. In this study, four commercial brands of Budu were analyzed for their chemical properties (pH, salt content and volatile compounds). The pH of Budu samples ranged from 4.50-4.92, while the salt (NaCl) content ranged between 11.80% and 22.50% (w/v). For tentative identification of volatile flavor compounds in Budu, two GC columns have been used, DB-WAX and HP-5MS. A total of 44 volatile compounds have been detected and 16 were common for both columns. 3-Methyl-1-butanol, 2-methylbutanal, 3-methylbutanal, dimethyl disulfide, 3-(methylthio)-propanal, 3-methylbutanoic acid and benzaldehye have been identified as the aroma-active compounds in Budu due to their lower threshold values.

Spices have been extensively used in history for flavouring and seasoning foods, beaverages and medicines (Stethberger, et al, 1996). The present studies have however shown that apart from the use of these plants as spices and condiments, they have several other wide applications in the local treatment and management of many diseases. In deed, in many occasions, the study observed that the indigenous people value the plants more for their ethnomedicinal uses than for spicing foods. For instance, ginger is more valued for its treatment of coughs, asthma, colds and hypertension than as condiment. The use of preparations of xylopia aethiopica, Piper guineense, Piper nigrum and Murraya Koenigii in post-partum treatment and restorative soup after childbirth is certainly of more value than as a mere seasoning or flavouring agent. The indigenous peoples of the study area have therefore developed various ways of harvesting, processing and administering preparations of these plants in the cure of the ...

Ive been called many things, but the Queen of Condiments is quite simply the best.. A culinary condiment? Yes, you heard me, a culinary condiment. I truly believe there is absolutely, unequivocally nothing more important when creating a meal or a dish! Through the years, I shared my love of food and cooking with my family, friends and students. As a self-taught cook and instructor, I love to taste, pair and explore unchartered territory in the kitchen.. Searching for simple, doable ways to dazzle the eye and delight the palate is what I do. Time and again I kept turning to certain combination of ingredients to brighten and enhance the flavor of my vegetables, meats and fruit. My students loved what I was doing. My customers loved it. And my husband couldnt live without it. Thats when I realized I was onto something.. In 2014, I took a leap of faith and launched my very own artisan line of culinary condiments called Delightful Palate. This line of vinaigrettes is gluten free and made with ...

1 The first step is to cut the artery-clogging fat from your diet. Avoid adding condiments made with butter, mayonnaise, shortening, sour cream, whole eggs, whole cream, or oils. You can still eat condiments; just choose those that dont contain much fat. Healthy condiments include salsa, mustard, low fat salad dressings, and Balsamic vinegar. Also try fresh herbs to flavor your food instead of using creamy condiments.. 2 The second step is to pay attention to how you prepare your food. Many foods that are heart healthy but are made unhealthy by the way they are cooked. Try baking, steaming, grilling, and boiling instead of frying and sauting in butter. Always remove the skin from animal meats as the skin contains mostly fat. You can still have fish, chicken, and beef on a low fat high fiber diet - just prepare it in a way that does not add extra fat.. 3 Reduce your dairy intake and switch to low fat products. Instead of whole or 2% milk, choose skim. Instead of whole sour cream, choose low fat ...

Making your own low carb condiments such as low carb catsup and BBQ sauce recipes requires a healthy sugar substitute, like Stevia.
Archeological excavations in the Indus Valley (Indian Subcontinent) have revealed that mustard was cultivated there. That civilization existed until about 1800 BC.[5]. The Romans were probably the first to experiment with the preparation of mustard as a condiment. They mixed unfermented grape juice (the must) with ground mustard seeds (called sinapis) to make burning must, mustum ardens - hence must ard.[6] A recipe for mustard appears in De re coquinaria, the anonymously compiled Roman cookbook from the late fourth or early fifth century; the recipe calls for a mixture of ground mustard, pepper, caraway, lovage, grilled coriander seeds, dill, celery, thyme, oregano, onion, honey, vinegar, fish sauce, and oil, and was intended as a glaze for spit-roasted boar.[7]. The Romans likely exported mustard seed to Gaul, and by the 10th century, monks of Saint-Germain-des-Prés in Paris absorbed the mustard-making knowledge of Romans and began their own production.[8] The first appearance of mustard ...

Ground Bixa orellana seeds are often mixed with other seeds or spices to form a paste or powder for culinary uses in Latin American, Jamaican, Chamorro, and Filipino cuisines. The seeds are heated in oil or lard to extract its dye and flavor for use in dishes and processed foods such as cheese, butter, soup, gravy, sauces, cured meats, and other items. The seeds impart a subtle flavor and aroma and a yellow to reddish-orange color to food. In Brazil, a powder known as colorau or colorífico is made from the ground seeds combined with filler seeds like maize. This powder is similar to and sometimes replaces paprika.[12] The Yucatecan condiment called recado rojo or achiote paste is made from ground Bixa orellana seeds combined with other spices and is a mainstay in Mexican and Belizean cuisines.[13] A condiment called sazón is commonly used in Spanish, Latin American, and Caribbean cuisine for meats and fish. The Spanish word sazón means season or seasoning. Sazón is made with ground ...
Some people find that spices and condiments are the worst things they can eat for their psoriasis. Condiments like ketchup, mayo, Tabasco sauce, vinegar and Worcestershire sauce and spices like cinnamon, curry, pimento and paprika may all cause inflammation. If you suspect a particular food might be triggering your psoriasis, try eliminating it from your diet and watch for changes in your skin. Additionally, keep an eye on your weight. We now know that weight gain increases the severity of psoriasis and the risk of incident psoriasis, says Dr. Delphine Lee, a dermatologist at Providence Saint Johns Health Center in Santa Monica, California. Scientists have studied the effect of weight reduction on the severity of psoriasis in obese patients with psoriasis and found that overweight patients with psoriasis on a diet that restricted calories for eight weeks to induce weight loss followed by eight weeks of reintroduction of normal food intake, showed a trend in favor of improving their psoriasis ...

The yellow flowers of the plant produce hairy seed pods, with each pod containing roughly a half dozen seeds. These seeds are harvested just prior to the pods becoming ripe and bursting. White mustard seeds are hard round seeds, usually around 1.0 to 1.5 mm (0.039 to 0.059 in) in diameter,[4] with a color ranging from beige or yellow to light brown. They can be used whole for pickling or toasted for use in dishes. When ground and mixed with other ingredients, a paste or more standard condiment can be produced. Sinapis alba is used to make the commonplace yellow table mustard, with additional yellow coloring provided by turmeric in some formulations. The seeds contain sinalbin, which is a thioglycoside responsible for their pungent taste. White mustard has fewer volatile oils and the flavor is considered to be milder than that produced by black mustard seeds.[5][6] In Greece, the plants leaves can be eaten during the winter, before it blooms. AU - Woodward, Timothy A.. AU - Raimondo, Massimo. PY - 2011/6/1. Y1 - 2011/6/1. N2 - Introduction: Doppler transabdominal ultrasound is a validated screening test for chronic mesenteric ischaemia, but gas and obesity are limitations. Endoscopic ultrasound has been proposed as a comprehensive test to evaluate chronic upper abdominal pain and is capable of Doppler measurement. We aim to evaluate the accuracy of Doppler endoscopic ultrasound (D-EUS) as a single screening test to rule out chronic mesenteric ischaemia in patients with abdominal pain and compare it with Doppler transabdominal ultrasound (D-TUS). Methods: We enrolled all patients ≥50 years with chronic upper abdominal pain and vascular risk referred for endoscopic ultrasound. All were scheduled for D-EUS and D-TUS plus a confirmatory test if ...
My favorite Thai curry is Tofu Panang curry, which is a type of red curry, but its not as spicy. It also has some of the same spices that are featured in Indian curries, which I happen to like as well. The problem with making Thai curries at home is that so many ingredients are difficult to find in your regular supermarket. While many supermarkets to carry pre-made curry pastes, I dont like to eat all those preservatives. Tonight I challenged myself to make a Panang-inspired curry using ingredients that I can get from the local store (and, considering how caloric Thai curries tend to be, something that would be reduced in calories!). I substituted lime juice for the kaffir lime leaves and lemongrass, ginger for the galangal, and since this is a veg*n version, I used cashews for the shrimp paste that is so commonly featured in non-veg*n Panang curry. The cashews add body to the sauce that may be lost from not using the shrimp paste. I also used soy sauce instead of vegetarian fish sauce. This ...
Perhaps I could cover the taste with curry powder and benefit from a seasoning thats been coming into focus as a potential anti-Alzheimers agent, at least in animals: turmeric. Greg Cole at UCLA and his colleagues have reported that curcumin, a phytochemical in turmeric (which gives curry powder its yellow color) not only helps prevent the buildup of toxic A-beta protein in the brain, but it also has antioxidant and anti-inflammatory properties. It has been used for thousands of years in traditional Indian Ayurvedic medicine as a treatment for respiratory conditions (asthma, allergy), liver disorders, anorexia and cough, among other things, and throughout Asia its used to treat arthritis pain and other inflammatory conditions. Cole is in the middle of a clinical trial on curcumin, but an interesting observational study came out in 2006 from Singapore that found that healthy people aged 60 to 93 who ate curry occasionally (once a month) or often or very often scored better on cognitive ...

Though chronic upper back pain is not as commonly experienced as lower back pain, it is nevertheless as painful as neck and lower back pain. Most often, chronic upper back pain occurs when a person tries to twist the neck or just turn it and because the upper back is not used to being turned or twisted it can lead to pain in the upper back. It is only when such pain persists and lasts for more than ninety days that the condition is called chronic upper back pain. In other instances when the pain does not last for so long, the common term used is acute back pain.. Proper Diagnosis. To effectively treat chronic upper back pain requires that the symptoms be properly diagnosed and the root cause isolated, both of which usually occur because of irritation of muscles and even malfunctioning joints. Joints only begin to malfunction when the joints that lie between the ribs and the upper back become strained or injured. On the other hand, irritation in the muscles is caused by lack of proper activity or ...

Staphylococcus condimenti is a Gram-positive, coagulase-negative member of the bacterial genus Staphylococcus consisting of single, paired, and clustered cocci. Strains of this species were originally isolated from fermenting soy sauce mash and are positive for catalase, urease, arginine dihydrolase, nitrate reductase, beta-galactosidase, and phosphatase activity. Unlike some clinical Staphylococcus isolates and some food-derived strains, S. condimenti has shown no noticeable resistance to antibiotics including lincomycin and penicillin. Threads are a popular condiment for rice in Spain and Iran, India and Pakistan, and other countries. Monosodium glutamate, or MSG as it is commonly called, is a food additive used around the world. MSG is a sodium based salt of the molecule glutamate which is used to enhance the flavor of a variety of manufactured products. People can even buy the product Accent or similar seasonings which can be used on food prepared at home. The flavor sensation that MSG imparts is described as umami, or a slightly metallic flavor that can take the place of some salt (sodium chloride) since sodium that is combined with glutamate provides a similar burst of flavor with less sodium. MSG is often found in snack foods, condiments, gravy and gravy mixes, sauces, ramen and other Asian foods, soups, stocks, as well as bouillon cubes and granules. Although MSG is considered safe in general, many people react negatively to MSG including migraine sufferers, some with gastrointestinal problems, and interstitial cystitis/painful bladder patients. Because of these reactions, many manufacturers in previous years had ...
Kelp can be cooked as a vegetable, its mild taste readily absorbing the flavor of sauces and condiments, and it pairs well with a wide variety of other veggies. Ideal cooking time is about 15-25 minutes depending on desired tenderness, and the fronds can be simmered whole in boiling water, rehydrated and cut with a knife before cooking, or cut dry with a sharp pair of scissors beforehand. A small handful of thinly cut dry strips added to rice as it comes to a boil improves flavor and adds a colorful garnish.. Kelp makes an excellent addition to soup stocks, and its naturally occurring glutamates enhance the flavor of other foods with which it is prepared. Use a 4-6 inch strip per quart of water. It can also be crisped in an oven on low heat, and broken up by hand or processed in an electric coffee grinder to be used as a salt substitute and seasoning.. Kelp is also commonly added to bean dishes when cooking. Adding a 4-6 inch strip for every 2 cups of beans will improve their digestibility, ...
Curcuma longa (Curcuma longa) is a rhizomatous herbaceous perennial plant of the ginger family, Zingiberaceae. It is native to tropical South Asia and needs temperatures between 20°C and 3°C (68°F and 86°F) and a considerable amount of annual rainfall to thrive. Plants are gathered annually for their rhizomes, and propagated from some of those rhizomes in the following season.. When not used fresh, the rhizomes are boiled for several hours and then dried in hot ovens, after which they are ground into a deep orange-yellow powder commonly used as a spice in curries and other South Asian and Middle Eastern cuisine, for dyeing, and to impart color to mustard condiments. Its active ingredient is curcumin and it has a distinctly earthy, slightly bitter, slightly hot peppery flavor and a mustardy smell. Curcumin can be used to test the alkalinity or acidity of foods. It turns yellow in an acidic food, and it turns red in an alkaline food.. In medieval Europe, Curcuma longa became known as Indian ...
It has been used for many other things. The crocus rayed with gold is among the flowers which crown Sophocles mighty goddess. The Greeks also, we know, reckoned it among perfumes. Aristophanes, in The Clouds, has a somewhat unquotable line on the subject. Among the Easterns it was held a choice spice: Spikenard and saffron, calamus and cinnamon, with all trees of frankincense; myrrh and aloes, were the spices that were to flow out from the garden of the Beloved in The Song of Solomon. One old authority held it to be the food of the fairies, and the humans in his day held it in high esteem. But now it is fallen from its high estate, and, though the County Council or some other body might still prosecute a man for selling adulterated saffron, it would be disinterested philanthropy, and bear no resemblance to the burning of offenders at Nuremberg in the fifteenth century for a similar offence. In Persia it is still much used as a condiment; in a less degree in Spain; in Holland one finds it ...

This fast chutney should be somewhere between fairly and eye-wateringly spicy, depending on your taste. If raw red onion has too harsh a flavour for you, try using a few shallots or a sweeter white onion instead. This is good for a curry dinner - either added as a condiment or used as a dip. It pairs well with cooling raita.
Now that you have the necessary materials, go to the areas on your property where you see rabbits and follow these steps.. First, scatter the human and dog hair on the ground, especially around any plants that have been chewed on. The smells emitted from the hair alert the rabbit that a threat is nearby, which keeps them away.. Continue by sprinkling the condiments (for example, black pepper) on the soil and follow this with the wood ashes, blood meal, crushed limestone and talcum powder. Be sure to cover any ground that is regularly visited by the rabbits. These animals hate the taste of all of these materials and are driven away when they encounter them.. Next, plant the garlic, marigolds and onions around the vulnerable areas on your property. Rabbits hate the taste of these plants so they are ideal as a natural hindrance.. Lastly, position fake animals, such as dogs, around your home. Place them in areas that have a high rabbit activity or are especially susceptible to invasion. These ...

Garlic is the king of all flavoring agents and condiments in many kitchens, and although garlic is nearly impossible to work into sweet recipes it works well in damn near every savory recipe ever created.  But many people avoid using fresh garlic because its a pain to peel, too sticky and stinky to chop or crush, and hard to properly roast, and their dishes are left devoid of that great garlic flavor.Luckily, there are simple solutions to all of these garlic problems- microwaving garlic cloves...
By Anna Ing. Boston is home to a few token BBQ places and the newest entry that joined last November has taken the city by storm. Helmed by Season One finalist of the popular Bravo TV Reality show Top Chef Tiffani Faison, barbecue fans are in for a treat. After the South End Italian restaurant Rocca closed its doors, Tiffani decided our fair city needed a new place that served Texas style BBQ. ... (Malay pronunciation: [lekor]), keropok lekor (Malay pronunciation: [kəropoʔ lekor]) or fish sausage is a traditional Malay fish cracker snack originating from the state of Terengganu, Malaysia.[2][3] It is made from fish and sago flour and seasoned with salt and sugar. It is slightly greyish in colour and gives off a fishy taste[4] and smell which becomes more prominent as it cools down after frying. The word lekor is said to be derived from a Terengganu Malay word meaning "to roll". It is usually made by grinding fish or vegetables into a paste, mixing it with sago and then deep-frying it. It comes in three main forms: lekor (long and chewy), rebus (steamed) and keping (thin and crispy). There are two types of keropok lekor which are the keropok lekor goreng and keropok lekor keping - the former are shaped like sausages with a chewy texture whereas the latter is cut into slices prior to frying, giving its crispier texture. The snack is eaten with special homemade chili blends that are ...

In almost all Malay kuih, the most common flavouring ingredients are grated coconut (plain or flavoured), coconut cream (thick or thin), pandan (screwpine) leaves and gula melaka (palm sugar, fresh or aged). While those make the flavour of kuih, their base and texture are built on a group of starches: rice flour, glutinous rice flour, glutinous rice and tapioca. Two other common ingredients are tapioca flour and green bean (mung bean) flour (sometimes called "green pea flour" in certain recipes). They play the most important part in giving kuihs their distinctive soft, almost pudding-like, yet firm texture. Wheat flour is rarely used in Southeast Asian cakes and pastries. For most kuih there is no single "original" or "authentic" recipe. Traditionally, making kuih was the domain of elderly grandmothers, aunts and other women-folk, for whom the only (and best) method for cooking was by "agak-agak" (approximation). They would instinctively[citation needed] take handfuls of ingredients and mix them ...

The traditional filling for wontons consists 70% of shrimps and 30% of pork.[4] Second, aficionados will insist on fresh, smooth thin noodles which are al dente, free from the taste and odor which is characteristic in many egg noodles when cooked. Third, the bouillon is light brown (prepared from dried flounder) and is usually steaming hot. Lastly, garlic chives are used as a garnish. The first two give the dish a wet but crunchy or ...
In Indonesia, ayam kecap is pieces of chicken simmered in kecap manis (sweet soy sauce), spiced with shallot or onion, garlic, ginger, pepper, leek and tomato.[2] Other versions may add richer spices, including nutmeg and cloves.[7] In Indonesia, the term ayam kecap is often interchangeable with ayam goreng kecap (a variant of ayam goreng in sweet soy sauce) and semur ayam (Indonesian sweet soy stew which uses chicken instead of beef). These are all similar-if not almost identical-recipes of chicken cooked in sweet soy sauce. However, recipes for semur ayam often add richer spices, such as clove, cinnamon and star anise. On the other hand, ayam goreng kecap has thicker sweet soy sauce and is often served with slices of fresh lime or a splash of lime juice. The main difference is probably its water content: although still quite moist, both ayam kecap and ayam goreng kecap are usually dryer and use thicker soy sauce, compared to semur ayam, which is more watery. Ayam kecap commonly uses poached ...

The earliest written record of shiitake cultivation is seen in the Records of Longquan County (龍泉縣志) compiled by He Zhan (何澹) in 1209 during the Han dynasty in China.[12] The 185-word description of shiitake cultivation from that literature was later crossed-referenced many times and eventually adapted in a book by a Japanese horticulturist Satō Chūryō (佐藤中陵) in 1796, the first book on shiitake cultivation in Japan.[13] The Japanese cultivated the mushroom by cutting shii trees with axes and placing the logs by trees that were already growing shiitake or contained shiitake spores.[14][15] Before 1982, the Japan Islands' variety of these mushrooms could only be grown in traditional locations using ancient methods.[citation needed] A 1982 report on the budding and growth of the Japanese variety revealed opportunities for commercial cultivation in the United States.[16] Shiitake are now widely cultivated all over the world, and contribute about 25% of total yearly production ...
