Quantifying the effects of exposure to indoor air pollution from biomass combustion on acute respiratory infections in developing countries. (57/814)

Acute respiratory infections (ARI) are the leading cause of burden of disease worldwide and have been causally linked with exposure to pollutants from domestic biomass fuels in developing countries. We used longitudinal health data coupled with detailed monitoring and estimation of personal exposure from more than 2 years of field measurements in rural Kenya to estimate the exposure-response relationship for particulates < 10 microm diameter (PM(10)) generated from biomass combustion. Acute respiratory infections and acute lower respiratory infections are concave, increasing functions of average daily exposure to PM(10), with the rate of increase declining for exposures above approximately 1,000-2,000 microg/m(3). This first estimation of the exposure-response relationship for the high-exposure levels characteristic of developing countries has immediate and important consequences for international public health policies, energy and combustion research, and technology transfer efforts that affect more than 2 billion people worldwide.  (+info)

Nutritional consequences of the Maillard reaction. The absorption of fructose-L-tryptophan in the large intestine of the rat. (58/814)

The absorption of fructose-L-tryptophan, an early Maillard reaction product formed from tryptophan and glucose, in the large intestine of the rat was examined. The possible involvement of cecal microflora of the rat in the absorption of fructose-L-tryptophan was investigated. Fructose-L-tryptophan was degraded by the cecal microflora (in vitro) after a 12-hour incubation at 37 degrees. Experiments with rat colonic rings and everted sacs indicated that a passive diffusion of this compound occurs in vitro in the colon of the rat. In vivo absorption was determined by introducing fructose-L-[3-14C]tryptophan directly into the cecum. Twenty percent of the total radioactivity injected was recovered in the urine after 24 hours. Fructose-L-tryptophan was detected in the urine, which suggested that this compound was absorbed by the large intestine but excreted without being metabolized. Approximately 1% of the total radioactivity was recovered in the expired air within 24 hours after injection. The small recovery of fructose-L-tryptophan in feces might indicate that this compound was degraded by the action of microorganisms in the large intestine of the rat.  (+info)

U.S. dietary exposures to heterocyclic amines. (59/814)

Heterocyclic amines (HAs) formed in fried, broiled or grilled meats are potent mutagens that increase rates of colon, mammary, prostate and other cancers in bioassay rodents. Studies of how human dietary HA exposures may affect cancer risks have so far relied on fairly crudely defined HA-exposure categories. Recently, an integrated, quantitative approach to HA-exposure assessment (HAEA) was developed to estimate compound-specific intakes for particular individuals based on corresponding HA-concentration estimates that reflect their meat-type, intake-rate, cooking-method and meat-doneness preferences. This method was applied in the present study to U.S. national Continuing Survey of Food Intakes by Individuals (CSFII) data on meats consumed and cooking methods used by >25,000 people, after adjusting for underreported energy intake and conditional on meat-doneness preferences estimated from additional survey data. The U.S. population average lifetime time-weighted average of total HAs consumed was estimated to be approximately 9 ng/kg/day, with 2-amino-1-methyl-6-phenylimidazo[4,5-b]pyridine (PhIP) estimated to comprise about two thirds of this intake. Pan-fried meats were the largest source of HA in the diet and chicken the largest source of HAs among different meat types. Estimated total HA intakes by male vs. female children were generally similar, with those by (0- to 15-year-old) children approximately 25% greater than those by (16+-year-old) adults. Race-, age- and sex-specific mean HA intakes were estimated to be greatest for African American males, who were estimated to consume approximately 2- and approximately 3-fold more PhIP than white males at ages <16 and 30+ years, respectively, after considering a relatively greater preference for more well-done items among African Americans based on national survey data. This difference in PhIP intakes may at least partly explain why prostate cancer (PC) kills approximately 2-fold more African American than white men, in view of experimental data indicating that PhIP mutates prostate DNA and causes prostate tumors in rats.  (+info)

Epoxide hydrolase Tyr113His polymorphism is associated with elevated risk of colorectal polyps in the presence of smoking and high meat intake. (60/814)

Microsomal epoxide hydrolase (mEH) metabolizes polycyclic aromatic hydrocarbons, carcinogens found in cigarette smoke and cooked meat. Polymorphisms in exon 3 and exon 4 of the mEH gene have been found to alter mEH activity. We investigated the association between these polymorphisms and colorectal polyps within the Minnesota Cancer Prevention Research Unit case-control study. Cases were diagnosed with colonoscopically confirmed adenomas (n = 530) or hyperplastic polyps (n = 202); controls (n = 649) were polyp-free at colonoscopy. Smoking history and meat consumption were obtained from self-administered questionnaires before colonoscopy. mEH genotypes were determined by PCR/RFLP or oligonucleotide ligation assay. The overall risks associated with exon 3 or exon 4 polymorphisms for both adenomas and hyperplastic polyps were not statistically different from 1.0. Compared with exon 3 Tyr/Tyr, 0 pack-years, risk was highest among those with the exon 3 His/His genotype and >25 pack-years of smoking [adenoma, odds ratio (OR) = 4.9 (1.9-12.8); hyperplastic, OR = 7.7 (2.5-24.0)]. Risks were not elevated among exon 4 homozygous variants, even in the presence of heavy smoking. Fried, baked, or broiled meat intake of > or =two servings/week (high) compared with < or =one serving/week was associated with a 2-fold increase in risk of adenoma. The highest risks were seen for those with the exon 3 His/His genotype and high cooked meat intake [OR = 3.3 (1.4-7.9); reference group: Tyr/Tyr, < or = 1 serving/week). Although mEH polymorphisms are not associated with an increased risk of colorectal polyps overall, genotypes that produce a slow phenotype appear to be associated with an increased risk in the presence of smoking and high intakes of cooked meat.  (+info)

Influence of dental carcass maturity classification on carcass traits and tenderness of longissimus steaks from commercially fed cattle. (61/814)

Two hundred beef carcasses were randomly selected by dental classification (zero, two, four, six, or eight permanent incisors) from a population of 11,136 carcasses harvested by a large commercial beef processor. Warner-Bratzler shear force and trained sensory panel evaluations of longissimus thoracis steaks as well as cooking and carcass traits were evaluated for differences among dental classes. No differences in Warner-Bratzler shear force (P = 0.60), sensory panel evaluations (P = 0.64) for tenderness, or percentage of total cooking loss (P = 0.73) were found among the five dental classes. Longissimus muscle color, USDA marbling score, hot carcass weight, adjusted fat thickness, longissimus muscle area, and USDA yield grade did not differ among the five dental classes. A significant dental classification x sex interaction indicated that heifers advanced in skeletal and overall maturity at a much faster rate than steers. An increase of intramuscular fat was associated (P < 0.05) with decreased shear force (r = -0.31), whereas darkening of the lean (r = 0.16), advancing lean maturity (r = 0.21), and increased evaporative cooking loss (r = 0.39) were associated (P < 0.05) with increased shear force values. Warner-Bratzler shear force measurements were not related to sensory panel overall tenderness scores. Carcass traits accounted for a relatively small proportion of the variation in tenderness of longissimus steaks, and dental classification was not related to tenderness.  (+info)

The effect of tea on iron absorption. (62/814)

The effect of tea on iron absorption was studied in human volunteers. Absorption from solutions of FeCl3 and FeSO4, bread, a meal of rice with potato and onion soup, and uncooked haemoglobin was inhibited whether ascorbic acid was present or not. No inhibition was noted if the haemoglobin was cooked. The effect on the absorption of non-haem iron was ascribed to the formation of insoluble iron tannate complexes. Drinking tannin-containing beverages such as tea with meals may contribute to the pathogenesis of iron deficiency if the diet consists largely of vegetable foodstuffs.  (+info)

Analysis of consumption of home-produced foods. (63/814)

One of the potential exposure pathways of concern when assessing human exposures to environmental contaminants is the ingestion of contaminated foods. Individuals who live near contaminated sites and who grow their own food may be at a higher risk than the general population. Estimating exposures to this subpopulation requires an analysis of homegrown food intake rates. The Nationwide Food Consumption Survey (NFCS) 1987-1988 data were used to generate intake rates for home-produced foods. Results of the analysis show that, among the general population, homegrown vegetables (18%) were the most commonly consumed of the major food groups, followed by fruit (8%), meat (5%), fish (2%), and dairy products (0.8%). The intake rates for the major food groups vary according to region, age, urbanization, and race. In general, intake rates of home-produced foods are higher among populations in non-metropolitan and suburban areas and lowest in central city areas.  (+info)

Toxoplasma gondii infection: relationship between seroprevalence and risk factors among inhabitants in two offshore islands from Taiwan. (64/814)

A seroepidemiological study of toxoplasmosis among inhabitants of Penghu Island and Kinmen Island offshore of Taiwan was performed using the latex agglutination test from July 1999 to June 2000. In order to determine risk factors for Toxoplasma gondii (T. gondii) infection, the effects of a history of eating raw/undercooked meats and raising pets were focused on using a self-administrated questionnaire. The seroprevalence (28.2%; 190/673) in Kinmen Island was significantly higher than that (2.71%; 8/293) in Penghu Island (P < 0.001). A significant difference in seroprevalence between both sexes was found in Kinmen Island (P < 0.05), but not in Penghu Island. The results of multiple logistic regression analysis showed that the older the age, the higher the OR in both Islands, yet a significant difference in seroprevalence between children and adults or the elderly was observed in Kinmen Island (P < 0.001). Moreover, those who had histories of raising cats or eating raw/undercooked meats seemed to have greater opportunities to become infected with T. gondii (OR = 2.9, 95% CI = 1.9-4.5, P < 0.001; OR = 1.5, 95% CI = 1.1-2.1, P < 0.05). In Penghu Island, a significant association between seroprevalence and a history of raising cats was also observed (OR = 4.6, 95% CI = 1.1-20.1, P < 0.05). Furthermore, workers, farmers, and fishermen seemed to be more susceptible to T. gondii infection than students in Kinmen Island.  (+info)
